“Flight above a Nid de Chardonnay” & “de Pinot Noir” are two cuvées of 6,000 bottles each. The name “Flight over a Cuckoo’s Nest” is of course a modest nod to Milos Forman’s film “Flight over the Cuckoo’s Nest” where the madness of conventional systems can fade away for the benefit of the wealth and the sincerity of the men of the art.
The challenge of these parcel cuvées: a Mediterranean character in white and a search for finesse and freshness specific to the qualities of the Pinot Noir grape variety.
